About the Recipe
I've got a zillion variations of the theme of fritters - try switching out vegetables or replacing apple with banana.
Ingredients
1 cup almond flour,
1 grated apple
½ cup grated zucchini
Optional: chopped sweet red peppers
½ cup olive oil
2 tsp baking powder,
1 tsp flax meal
1 tsp pure vanilla extract
¼ tsp salt
Preparation
Stir everything together in a bowl and let sit for 10 minutes. Heat a non-stick frying pan to medium. When hot, drop 1 Tablespoon size pancakes and turn when they start to bubble.
