G.P. Gottlieb: Murder, Mystery, and Recipes: Just a Little Cozy

About the Recipe
In last week's grocery order I forgot tortilla chips and ate this with a spoon! It's that good!

Ingredients
1 ripe avocado
2 TBSP salsa (my favorite is Trader Joe’s Chunky Salsa)
1 scallion, chopped (grow them on the windowsill, so you always have extra)
1/2 shallot or sweet onion, chopped
1 cup cherry tomatoes, halved
1 cup red and yellow sweet mini peppers, sliced
1/4 cup (about a handful) parsley or cilantro, chopped
Juice of 1 lime or about 1 TBSP Nelly & Joe Key Lime juice (it’s always in my fridge)
1/4 tsp each salt and pepper (more to taste)
Sprinkle of red pepper flakes or 1 tsp of Sriracha (also always in the fridge)
Preparation
In a medium bowl, lightly mash the avocado and salsa. Stir in the remaining ingredients. It's not a traditional guac, but it stretches one avocado into a fresh salad. Serve immediately as a side or with tortilla chips.
